The first thing Nick Perkins, chef and co-owner – he’s also part of the team behind Lower East Side’s Cervo and Hart’s, a couple blocks away – tells me as he’s winding down after service, is this: “We are not a restaurant. We are a chicken bar.” Okay then. So, The Fly is a super spacious, low-fi bar specializing in offbeat wines, classic cocktails, and as you’d guess: chicken. The organic, free-range birds are liberally rubbed with a brick-red mélange of globe-trotting spices and twirled on a rotisserie until pleasingly perfumed and juicy. The sides are simple and sublime – you can pick from bread, greens, and potatoes – but it’s the pitch-perfect fries you must get. Slim, deeply browned, and generously seasoned, they’ll be chased until they’re woefully no more.
